Sườn mua về cho vào nồi nước đun sôi, bắc ra xả qua nước lạnh cho hết vụn và bẩn bám trên sườn.
Pha nước mắm mặn ngọt: 2 muỗng canh nước mắm, 1 muỗng canh đường, 1 muỗng nước lọc, 1 muỗng canh nước cốt chanh, tỏi và ớt băm nhỏ hòa tan. Hòa 1 muỗng cà phê bột năng với 1 muỗng canh nước lọc trong 1 chén khác.
Cho dầu vào chảo, chờ dầu sôi cho sườn vào chiên vàng. Gạn bớt mỡ khỏi chảo sườn, đổ hỗn hợp nước mắm vào vặn lửa nhỏ hết cỡ đun chừng 10 phút cho nước mắm chua ngọt thấm vào sườn, đến khi thấy tỏi bắt đầu hơi se lại thì đổ chén nước bột năng vào đảo đều cho nước sánh lại, sốt bám vào miếng sườn thì tắt bếp.
Lấy sườn ra đĩa, dùng với cơm trắng. Chắc chắn sẽ hấp dẫn cả gia đình bạn và đặc biệt rất tốn cơm đấy!
