Mực ống mua về đem lột bỏ hết phần da bên ngoài rồi sơ chế thật sạch, để ráo nước, đem cắt mực thành những khoanh tròn vừa ăn.
Cho 1 muỗng cà phê muối tinh vào chảo, rang ở lửa nhỏ để muối khô ráo thì tắt bếp. Cho muối vào cối hoặc bát tô, thêm 1 muỗng cà phê tiêu đen rồi giã nhỏ là được hỗn hợp muối tiêu. Hành lá rửa sạch thái nhỏ, ớt sừng băm nhỏ, nếu ăn ít cay bạn có thể cho 1/2 quả ớt là được.
Trộn đều 50g bột bắp và 50g bột mì cho vào tô, thêm 1/2 hỗn hợp muối tiêu vào cùng và trộn đều, chúng ta được phần bột khô để tẩm mực.
Đun nóng nhiều dầu ăn trên bếp, cho mực vào tô bột rồi bọc kín và xóc đều cho mực bám đều 1 lớp bột bên ngoài. Khi dầu đã nóng thì gắp từng miếng mực cho vào chiên ở lửa lớn. Mực chín vàng giòn là có thể vớt ra để ráo dầu.
Cho mực vừa chiên vào tô, thêm hành lá cắt nhỏ, ớt băm rồi rắc hỗn hợp muối tiêu sao cho vị mặn vừa đủ là được. Xóc đều cho gia vị ngấm đều vào mực và cho mực chiên muối ớt ra đĩa thưởng thức.
